Shivat HaMinim Project

שִׁבְעַת הַמִּינִים — Shivat HaMinim: The Seven Species of Our Harvest, which play a significant role in sustainable agriculture, are celebrated for their nutritional value. "אֶרֶץ חִטָּה וּשְׂעֹרָה, וְגֶפֶן וּתְאֵנָה וְרִמּוֹן; אֶרֶץ-זֵית שֶׁמֶן, וּדְבָשׁ" — "A land of wheat and barley, of vines and fig trees and pomegranates; a land of olive trees and honey.” — Devarim (Deuteronomy) 8:8. These species not only form the foundation of kosher brewing but also highlight the importance of preserving our agricultural heritage.

Rooted in the sacred list of the Shivat HaMinim—the seven agricultural products that symbolize the fertility and abundance of the Land of Israel—we are not merely using these ingredients; we are cultivating our heritage to sustain our future. Our 'Cultivation and Production' cycle (as visualized in our infrastructure map) brings these ancient species from our California fields directly to your glass and table, showcasing our commitment to sustainable agriculture and kosher brewing practices.

Cultivating Heritage, Sustaining the Future

We are creating a sustainable, closed-loop network across California—from San Diego to Silicon Valley—to bring you a true taste of traditional bounty, strictly kosher-certified at every step.

• חִטָּה (Chitah - Wheat): The essential foundation for our artisanal kosher breads and specialty wheat brews, cultivated with sustainable agriculture and solar-powered farming.

• שְׂעֹרָה (Se’orah - Barley): The backbone of our kosher brewing process. We use premium, sustainable malts to build complex flavor profiles for our signature kosher beers.

The Fruits of Our Table

• גֶּפֶן (Gefen - Grapes): Beyond brewing, we cultivate grapes for our community table and limited-run, kosher-certified non-alcoholic grape products.

• תְּאֵנָה (Te’enah - Fig): Celebrating the sweetness of the harvest, we integrate figs into our curated kosher food offerings.

• רִמּוֹן (Rimon - Pomegranate): A powerful antioxidant and a core part of our seasonal kosher beverages and culinary menu.

The Sustenance of Our Land

• זֵית שֶׁמֶן (Zayit - Olive Trees): We press our own strictly kosher extra virgin olive oil and provide whole olives for the ultimate food pairing.

• תָּמָר (Tamar - Date Palms): A source of natural, ancient sweetness, we use California-grown dates in our specialized recipes and brewing innovations.

A Kosher-Certified Harvest — לחיים!

From our dedicated cultivation fields to our solar-powered production facility in San Diego, the Shivat HaMinim are the heart of our mission. Every product we create—using our strict Kosher Distribution Network—is a celebration of sustainable agriculture and timeless tradition.

L’Chaim to the Seven Species. L’Chaim to Life!

הָאֶתְרוֹג — The Etrog: The Heart of the Harvest

וּלְקַחְתֶּם לָכֶם בַּיּוֹם הָרִאשׁוֹן פְּרִי עֵץ הָדָר

“And you shall take for yourselves on the first day the fruit of a beautiful tree.” — Vayikra (Leviticus) 23:40

At Yiddish Brewskis, our San Diego production facility stands as a testament to sustainable agriculture and the Shivat HaMinim (Seven Species). We cultivate these ancient staples using a solar-powered, closed-loop water recycling system, ensuring that every drop of our kosher brewing process honors the earth and our tradition.

The Foundation: The Seven Species & The Etrog

We bridge the gap between the biblical harvest and modern craft brewing by integrating the Shivat HaMinim with the Etrog (Citron)—the "fruit of the majestic tree."
